Everything good on PvP is usually as well as good in PvE in most cases. I'd recommend you to play as your favourite ones, Spyro's Adventure is more fun than actually challenging (but some exceptions, like the final level and the final boss battle, but anyway, with skill and practice you can master it with any character).

There're already tons of topics about this in the forum, check about all the Giants section and I'm sure you'll find several stuff appealing to this.

is it up to date since Undead Defender is so low tier ?

I think so, but I'm not sure.

All the PVP stuff was very much up to date until Swap Force (and later since it was axed out), PVE usually followed closely. I wasn't too interested in it at the time, but it's possible Undead Defender is better for multiplayer.

There's also Buuzer's videos on Skylanders paths, but they weren't particularly ranked by the end.

The Undead Defender path stated as low tier is the one from series 1 Chop-Chop. Check the wow-pows, because they're crucial in some cases at the time of improving a character power in battle. In this case, the combo of this path and Chop-Chop's wow-pow is what makes it properly good.
