I liked A Hero's Tale, so I don't think this was the last good on per se, but it is one of the best.

Yep. A Hero's Tail is a good game but failed to become one of my favourite games. Only the first three Spyro games are my favourite games.

Members from sports teams come and go all the time. That doesn't make them any less actual teams, and their coaches still train the teams unless they retire or are moved. Similar case with companies like Insomniac Games.

This is not the last 'good spyro game'; all of the spyro games are good in their own way. Whether a game is good or not is all personal preference anyway. IMO, the answer to this topic is no it's not the last good spyro game.
