I goofed on one and made two water brawlers. I tried doing the Spryo method but they are still the same.(unless it works differently on the switch)

Yeah, if you're on the Switch, it works differently to other consoles, as it saves the figure data directly to the console, rather than to the figure unless you manually do the save back onto the figure. Just go into the character list thingy and delete whichever entry off the list that you don't want.
