I may be blind but we are just sitting down to play imaginators for the first time tonight and I cannot find the subtitle option anywhere. I know the past games have had them. Am I blind or did they just say screw it ? Please let me know I'm trying to hold off on starting until I can find out

There are no subtitles in Imaginators. There were no subtitles in Superchargers either.

Yup, and cutscenes outside of Swap Force(which has some of the laziest subtitles without even something as simple as following the voices) never had them to begin with. This is unfortunately and issue on both teams, they don't seem to care much about people who might not understand what's being said(not first language, hearing impairment, etc).

I think that language by itself isn't a big issue, since the games have been translated to a bazillion different languages. So...

All of the Skylanders Games never had Subtitles to begin with, i think well only the cinematics.

Considering the amount of essential sound cues, the game really isn't accessible to them, which is a shame since they probably could up the amount of visual cues. Nor to blind people, since there's no indication of when you hug a wall (like say pokémon).
