Do we know yet what all is required to 100% the game? If so, could someone tell me, or if not, can someone tell me what we do know? Thanks in advance!

Short answer partially.
Big Answer
We don't know what counts for 100% aside from level stars. Because the game is now overworld-based, the stuff on said overworld could also count. However, for levels, we know that Sensei Shrines and Gongs are paywall collectibles, everything else anyone can find. DOUBLE HOWEVER, it's an actual doubt if we can open Sensei Shrines more than once with the same character.

Buy all the stuff, get all the stuff in each level, get three stars on each level. As usual, stupid.

Actually what I'm considering at this point, haha. If what Bifrost said is true and more than one Shrine can't be accessed by the same character, I'll need it.
