They're not canines, they're Eevees. Very strangely colored Eevees with unusual powers/abilities.
To answer your question, though, Eevees in particular appear to be loosely based on foxes.

I couldn't tell because they were taller than I picture Eevee to be. They're pretty.

I would assume they bark. Maybe hiss, too. They look like a mix between feline and canine.

Probably a high pitched bark. Or maybe like a dingo.... Hissing....hmm...I'm not so sure...

I imagine it like domestic dog barking. Like a medium-sized dog bark. Not high pitched, less foxy, and more ... I dunno. You get the idea.
Umbreon and Espeon seem more cat-like than canine-ish.

....Espeon yes. Idk about Umbreon though......seems more doggish to me.

Umbreon and Espeon are pretty much the same in body structure, besides small things like ears and tails. Same for all the Eeveelutions.
