It comes back to, if they couldn't build a quality product on the Wii platform, they shouldn't have tried. Aside from the crashing, there are numerous other issues with the game that I have noticed. Wii U doesn't have those issues.
You miss my point.
They do not redesign the graphics for every platform, they have neither the time or money to do that. The art department focuses on the lead platform and makes minor adjustments for the ports. The graphics in Giants were customized and designed for that platform. The WiiU is completely capable of anything the 360 or PS3 can do, therefore no downgrading necessary. In fact, had they the time and budget, they could have done even more on the WiiU given it is more powerful than either. The PS4/XBone look so good because of the increase in resolution to 1080p, mainly.
They did deliver a decent product for the Wii, with some issues. The alternative as you put it would be none at all, and the whining would have been exponentially worse. Unlike you, there are many people that would prefer a downgraded version to none at all - given they may not have the option or desire to have another platform.
I think it was a good choice to move forward with Swap Force and leave the Wii anchor behind. Otherwise we would be playing a game optimized for a console that was underpowered in 2006, in 2013. The Wii has been discontinued and production halted now, they had to take the step eventually lest the franchise would die. Who is going to want to play a Wii quality game on their new PS4? The Wii had a good run, I really liked mine. But, it has always dealt with downgraded ports.
