I wondered that too. Maybe it's because they stop breathing and their heart stops beating, It's just a guess but it could be the reason why people die when they are killed.

Becuase either they are fataly injured or a vital organ has been afected. When you are killed by a sword or knife to the heart, you don't die inmediately, you die slowly.
