Dose anyone know all of 's quests and how to complete them.

If memory serves, his personal quest is to simply eat Watermelons, so just pop him out for those. Otherwise it's defeat enemies while at full health, hit targets in the cannons, and the usual forte.

I can confirm the Watermelons, that's exactly what I did, switched to him whenever I saw a Watermelon. It's around then that I first encountered the "My portal won't save" issue, so I started making sure Camo got some coins - which save instantly - before removing him. For a sec I thought it was his OWN Watermelons, I was like "You can eat those?". Had to see a Watermelon food item to realize.
And yeah, the Life quests are killing enemies at full health and hitting targets in the cannon (I think only turrets like the one on the ship, not sure about actual cannons like in I think Swarm's Heroic Challenge. If you have Swarm, check that, if it works you should get this quest fast on that HC). The other 6 quests are obviously the same as everybody else.

The robot riding sections in the Secret Arkeyan Vault of Secrets counts as a turret, every time you smack the enemy war machines with a projectile (or in Camo's case, a melon), it counts for Melon Maestro, so shoot em all the while you're punching em, this section ALSO counts for "Fully stocked."
As for the generic quests, it includes Defeat 1000 enemies, eat 50 pieces of food, do an arena challenge without damage, do a heroic challenge without damage, do 7500 in bonus elemental damage, win 10 PvP matches, as well as the three previously mentioned.

Since you're asking these questions, I'm guessing that means you don't know how to check for yourself.
Press the alternate-Start/Play (whatever button Pauses the game, press the mirror button on the controller). Sometimes that button is Back or Select, on the Wii it's [-]. This brings you to what they call the Character Info screen, but I call the Character Management screen (since only one command is showing info/stats, the rest are about managing the character). You'll see the current character on the left side, maybe doing some "I'm bored" actions, with a bunch of commands on the right. One command is Quests. Entering this shows the character's current quest rank, showing their elemental symbol decorated appropriately for the rank, along with stating how many quests are left to reach the next rank (new ranks are at 3, 6 and 9 quests). Pressing the Primary attack - it'll say what button if you aren't sure - dismisses this screen to show a grid of the 9 quests. A dimmed icon means you haven't done it, a gold icon means you have. Highlighting each icon shows what it is and your progress on it. The icons are laid out in two rows of 4 (8 total) with a ninth by itself on the right. The left-most 6 are common to all Skylanders, though the bottom right of these 6 has the elemental icon, it's the elemental damage quest everybody has. The final icon in each row is specific to the element (so, the Kill At Full Health and Hit Turret Targets quests for Camo), and the lonesome ninth is the one specific to the character (Eating Watermelons for Camo).

am i the only one thats amazed on how many people don't know how to find the menus in this game?

A bit, except that you have to use the OTHER button. The Start/Play button people use all the time, in all games, and every game I know of uses it as Pause. The other button doesn't seem used as often, people forget it even exists, never mind having such important uses as in the Skylanders games.

it took me a while to realize you could click through the quests screen to see the actual quests. It's not really intuitive and there is nothing on the screen to indicate more information can be had by clicking.
