Here are the starting stats for the orange-based Legendary 3-pack, since I can't find them anywhere else, and just got it today.
In parenthesis I'm showing the difference between the Legendary's stats (on a fresh figure and new game) and their original forms' stats (retrieved from the Spyro wiki)

Legendary Ignitor:
Health: 240
Speed: 43 (+0)
Armor: 24 (+12)
Critical Hit: 50 (+10)
Elemental Power: 39 (+14)

Legendary Slam-Bam
Health: 310
Speed: 35 (+0)
Armor: 36 (+6)
Critical Hit: 30 (+20)
Elemental Power: 46 (+21)

Legendary Jet-Vac
Health: 240
Speed: 50 (+0)
Armor: 18 (+6)
Critical Hit: 20 (+0)
Elemental Power: 53 (+28)

Also, Legendary Bouncer:
Health: 430
Speed: 60 (+0)
Armor: 36 (+12)
Critical Hit: 60 (+0)
Elemental Power: 46 (+21)

Where's the stealth elf?

I put some of those on the Spyro Wiki already under the characters, mainly Legendary Ignitor.

I'm on a mobile device that isn't letting me run tabs at the moment, but I think Legendary Stealth Elf has +6 Armor, +20 Critical Hit, and +7 Elemental Power.

I know starting out the regular S2 Stealth Elf is faster.
