You can play with just the GamePad, there was a video that showed it off. When you're not using it with just GamePad the Stat screen is displayed. (Can switch to Objectives.) Been confirmed the GameBad can't be used as an optional Portal though.

I believe it was the last interview that TFB did, but they claimed that the NFC in the gamepad would allow you to make the LightCore figures glow. (and not just that, all NFC devices)

I think it's safe to say that, if you want to do co-op, at least one person will have to use a Wii Remote/Pro Controller. Whether or not the Pro Controller will work however is a different matter, though it is entirely possible.
