We don't know yet, but the Fire Giant is named Hot Head, and one of the users here is calling him Hot Dog until his name is revealed.

I thought Hot Dog when I first saw him and like it the most, but there seems to be a fair few haters of it (on facebook anyway) HATERS GONNA' HATE!

But now the Spyro wiki have his name as Hot Dog so it's probably official.
I now know all current names according to Spyro wiki. These are: (In order of Magic, Earth, Water, Fire, Tech, Undead, Air, Life.)

Regular:
Pop Fizz
Flashwing
Chill
Hot Dog
Sprocket
Fright Rider
Jet Vac
Shroomboom

Giant
Eye Brawl (Unsure of if element is correct)
Crusher
Thumpback (Unsure of if element is correct but think this one is right)
Hot Head
Bouncer
Ninjini (Unsure of if element is correct)
Swarm
Tree Rex
