I'm having trouble working out where the 1st boss is going to try and hit you BEFORE he hits, is there any way of working it out or is it impossible to know?

If you keep attacking him quick enough, it doesn't matter much if you get hit.

I haven't played ANB in ages but I seem to remember that if he raises his sword up, he's about to attack downwards so you should move up to the top right corner, and if he moves his sword to his right (your left), he's about to attack sideways so you need to move down.
