Hmmm... Do those small cutscenes before a level in RR count??
'Cause my fav is the Magma Cone one where the giant lava rock smashes that faun and the other faun's like, wut?
Then the one after you leave MC: Where the faun gets ticked off about the party-blower guy and knocks him off into the lava

Moneybags releasing Sheyla, Srg Byrd, Bentley and Agent 9 has best cutscenes, he finally get's his butt kicked, rocketed, smashed and fired. And this Spyro-Moneybags confrontation in the end of the game, when Moneybags looses all his gems... Epic.
