Hunter, the guy you see when you beat the game, he has bow and arrows, and you see his back in the cave. Ignitus says stuff about a new world, but Spyro has allies. My question is what happens when Hunter meats Spyro in LoS 3? Will Hunter die? Will Spyro lose his memory of Hunter, and vice versa, along with Avalar to make Spyro 2 make sense?

First, it's the Chronicler that says that. Second, this is a reboot... Spyro probably won't know anything about Hunter. ;>.>

No, it's showing the past in a trilogy, not a series.
