I was inspired by BlueFox's posts of Skylanders concept art in the Skylanders part of the forum. Anyway, I've been wanting to gather together as much TLOS concept art as I can in one place. Unfortunately, I couldn't find much on the Spyro wiki, but that might just be me not navigating it correctly.

If there's already a thread, feel free to direct me to it, but for now, I'm gonna post everything I've found so far.

I feel like that kung-fu kick pose was repurposed for some of the Wendy's merch

i wouldn't be surprised. i assume it's the key chains you're alluding to?

I still have that key chain! I worked at Wendy's back when they had those as the kid meal toys. I took one of each, and I even have the Spyro bag the meal went in.

it appears vivendi acquired radical in 2005 (https://en.wikipedia.org/wiki/Radical_Entertainment)

vivendi (aka universal) was the holding company for spyro at the time (https://spyro.fandom.com/wiki/Vivendi_Games)

i assume radical was therefore tangentially involved. perhaps they helped to write the strategy guide.
