I've been looking at gameplay and it appears people have lots of trouble beating enemies in Cloud Kingdom but make two-hit kills in the Dragon Level. Then I see Shark Shooter Terrafin's sharks do 14 damge points while in SF Drobot fired way faster and did 18 per hit. And Hammer Slam Bowsers hammer did 22 I think while Rubble Rouser did damage in the late 30s.... Am I the only one scared?

It does depend on upgrades and villains may have less health.

Also those are demos, as in, not the final product. I was worried about the damage output too, but then I realized they probably make the enemies weaker for the sake of presentation.

That and it might be locked on Easy because some of the press people absolutely suck at the game. While it might be too late for things like balancing, there's difficulty and how early those levels are to keep in mind. Lou even said that Cloud Kingdom is when the game's difficulty starts to pick up.

Even if it is that bad, my response is the same as Jak's in Jak 3 when he had to fight in the arena for the first time: "Fine. Bring 'em."

After Trap Team and especially SWAP Force, I'm looking forward to an increase in difficulty, especially if it comes earlier in the game.
