The Sparx icons start smiling as they go up
Like compare red to gold.

Yeh they're based off of the old Gameboy Sparx sprites if I'm not mistaken. Each time Spyro would be hit, the little icon of Sparx would pop up indicating how healthy he was, red being the least healthy, gold being the most obviously. Hence..:
Red- Least healthy, newest,
Green- slightly more healthy, slightly new, and so on.
Red Sparxes are sad Sparxes. ):
