Today is just realistic white dudes with guns but they could be more appealing with better colour and design.

Perhaps the next Call of Duty or Gear of War's cover could be done by the likes of Yo****aka Amano or Ayame Kojima.

You could have Mass Effect characters looking the same with belts, zippers or spiky hair but still drawn with thicker outlines by Tetsuya Nomura.

Then there's Yoji Shinkawa's work... Oh my goodness! How awesome would it be to see his style applied to western games.

There are artists doing the realistic dudes with guns - and the guns, and the other things to shoot at. Just because it's not stylish doesn't mean there isn't someone doing the 3D models and designs to begin with. Also, different styles, you can't just apply one to every single game because you don't like the other.

I agree with the above post, but OP, you also have to keep in mind that there are plenty of current/upcoming games with different artistic styles. We aren't overrun with gritty realism, and we aren't lacking surrealism:
