I have 2 users, if I log in on the second one will people see me as online on the first one and see what game I am playing

People can only see what games you're playing if an account is signed in.
So if you're playing on the second user and you're not signed in, they won't see what you do.

When you switch users, your account on user1 automatically signs out. Same the other way around. If user2 switches account to user1, the account in user2 will sign out.

Users are mostly for the reason of having more than one person use the system.
My brother and I do the same. When we switch, our accounts sign off automatically. No one can see what the other user is doing.
