I was wondering, if the steamed brocolli guy doesn't have him on it yet could I trap brocolli guy on a regular trap then replay the level again and trap him with the steamed trap? So I have like the normal and steamed one?

The variant traps have the villain already captured, even if you haven't encountered them in the game yet.
I haven't gotten to the levels with either Shield Shredder or Brawl & Chain to capture them for the vault, but the variants traps worked as if they were already captured and appeared in game just fine.

The variant traps will automatically convert the villain into a variant if you trap him or transfer him from the vault. The general rule in TT is that everything follows the trap. This includes upgrades, variants, hats, and trinkets.
Example: if you have upgraded Broccoli Guy in your Life Torch, and then move him from the vault into the Life Toucan, he will be un-evolved, unless of course you did the evolution quest again when he was in the Life Toucan. There is also no way to reset villain flags in traps once they are set. The Broccoli Guy in the Life Torch will always have the upgrade skin.

I wasn't planning on that I wanted two villains in two traps without using the vault so I'd have the same villain in two different traps at the same time.

Interesting, so if I'm understanding right it seems like the only way to guarantee a villain appears upgraded no matter what trap you use is to complete their quest once while in each trap of its element. So up to six times for most villains.
Might end up doing that after getting all figures to level 20 and upgraded, or as new traps are released. Anything that extends the longevity of the toys/game is a plus as far as I'm concerned.
