what would it be? and I'm not limiting it to just natural elements like water, I also mean stuff like manipulating gravity or energy.

I'd like to manipulate light and photons.

As weird as it sounds, I'd probably go with manipulating Air/Wind. It's a toolbox of abilities that are mostly useful. Is someone going to attack you? Lower the air pressure directly around their body to almost zero so they explode, as if they were in space. Is a whole horde of people after you? Over-oxygenate the air around them and throw a match, and it's a flambe. You can increase the air pressure around someone to subdue them, or pull the air straight out of their lungs to collapse them. And that's before we even get to the fun stuff. Is someone annoying you? Just hold all of the air molecules in a bubble around you still so no sound travels through the bubble. Want to fly? That power's generally a given when it comes to air-wielders. Weather manipulation is also a common power associated with the air, and you can have air molecules move and rub to create enough friction to create static charges, so creating lightning is a possibility, too.

Either physics and lightning at the same time so I could be a Sith lord, or radioactive elements so I could just touch someone I hate and they'd slowly die of cancer.

Okay... If I could manipulate one element only and it would pass as an legitimate element, I'd choose carbon. Every life-form is carbon-based so it would be quite cool and twisted element to be able to manipulate. I don't know if that even sounded logical... yeah...
