Because anime is such a wide and extensive thing. Big Green is saying they don't like any anime at all, and the only thing that differentiates anime from western content is the fact that it's Japanese. So basically, Big Green will hate it just because it's a Japanese show.

Anime is such a wide thing though. If you just say you hate anime rather than saying you hate an aspect of it or a genre of it, I consider that to be racist because there's so many different kinds. People who hate anime will just hate it because it's a Japanese show. They won't give a single anime a chance purely because it's anime (which is just a show that is Japanese).

You're "assuming" what she's saying is racist and therefore makes her racist, which is not true. You have no idea why she doesn't like it and it makes you no better accusing anyone of racism when there's no evidence.

It's been said to death but everyone has their own opinions and opinions aren't facts. As long as someone's opinions aren't eventually going to lead to physical or verbal harm of another, you're entitled to think whatever you like. Her opinion shouldn't change the way you think of what you like.

There's way more to not liking something just because it's "Japanese." You said yourself that it's diverse, and you're contradicting yourself by saying Big Green doesn't like it because it's Japanese.
