Light Element Kirby?
Kirby should clearly be Air element. He's a floating puffball who inflates himself with air and who sucks opponents in with his vacuum breath. Everything about him screams Air element.

I personally see Kirby as Magic. I mean, he's got the power to copy his enemies' powers and could be able to master all the elements, like Spyro supposedly can. |

I think Kirby would suit Light, Air and Magic.
Light because he's a Star Warrior which flies around using the Warp Star. Air because of what Muffin Man said. And Magic because of what Adam said. It would really depend on which of those aspects they choose to focus.

I'm pretty sure Kirby's copy ability is never stated or even implied to be magic-related at all. It just seems to be a natural attribute of his species. And copying powers isn't the same as mastering every element. Quite the opposite, in fact, since Kirby needs to rely on others in order to use those powers at all. It's like saying a parrot has mastered every language just because it can copy every language.

What about Deluxe Copy Abilities then? He can change them at will in the game with that feature, not even a need to find the enemy first, he just has to have absorbed the ability stand.
But Spyro's Magic seems to derive more from actually using magic to change(you can see he throws purple smoke seconds before using fire), while Kirby just absorbs stuff, even if it's inside him already(see Squeak Squad). He seems to have a lot more to do with Air since, even without copy abilities, he can get quite a hurricane going with the games that use charged inhale like Return to Dreamland and Amazing Mirror.

Yeah, I guess it'd really depend on what they'd want to base his gameplay on. If on Copy Abilities then Magic, if on Inhaling/Inflating then Air. Both elements kind of already have their own Kirby anyway (Wrecking Ball and Pop Thorn if you don't know what I'm referring to), so he could fit in either.

Slobber Tooth could be considered an "Earth Kirby" then expecially if he's on the inhaling path.

Yoshi (Magic type with glittery feather wings called Magical Wing Yoshi) would have made a good Amiibo-lander with a Water Sea Vehicle called the River Dragon. DK is a Life Sky-miibo with a Tech Land Vehicle and Bowser is a Fire type with an Air Sky Vehicle.

That's just Kirby absorbing a more powerful version of the copy essences he normally absorbs. He's still getting the powers from an outside source rather than mastering them himself, and he eventually loses them since he no longer has those abilities in Kirby games that take place after Super Star. Also there's still no indication that it has anything whatsoever to do with magic. Quote: Bifrost
Yeah, they make it very clear that Spyro uses magic to generate fire and that his potential to master all the elements is due to his magical abilities.
