Decorative purposes maybe?

Idk, some do taste pretty good, like there are some chocolate flavored ones for example.

Um excuse me, but sprinkles are amazing, they give a crunch to the ice cream that doesn't add flavor, and they're pretty. Don't dis mah sprinkles, man

As Avatari, I believe it is only for decoration purposes. Some sprinkles do get kind of fancy and make the dessert look more appetizing, to me that is.
