I would like to create this topic to document the movesets of the new characters to give a better idea how they'll play and attack. If you have info on the movesets please post it below.

SKYLANDERS

Snap Shot:
Attack1: Shoot the large arrow/sword
Attack2: Slam down and attack enemies with the arrow/sword
Attack3: Control a whirlpool that damages enemies (think of Ignitor's flame form)

Food Fight:
Attack1: Shoot tomatoes out of bazooka
Attack2: Throw some type of acid barrior line in front
Attack3: Go into the ground and plant a seed, the seed will then turn into a big plant that damages enemies.
NOTE: Food Fight has a Zucchini Shotgun as well. I have no idea how this works and I'll have to see some gameplay footage before I can add it to the list.

Wallop:
Attack1: Swing hammers
Attack2: Throw Hammers like two boomerangs
Attack3: Throw one hammer in the air. The hammer will then fall and hit the enemy

Wild Fire:
Attack1: Swing humongous shield
Attack2: Shoot fire-lightning from other hand
Attack3: Breath Fire

Chopper:
Attack1: Shoot rockets
Attack2: Shout a large roar to attack enemies
Attack3: Fly on helicopter wings [I believe with upgrades you can fire the rockets (think of Ninjini's bottle) and can hold down a button to fly forward with the propeller blades out.]

Funny Bone:
Attack1: Launch a line/blade/thing of energy that goes through enemies.
Attack2: ????
Attack3: Turn into a saw blade thing and rush forward (from what I can tell)

Torch:
Attack 1: Flamethrower
Attack 2: Throw flaming horseshoes
Attack 3: Whip her hair around

Trappable Villains

Chompy Mage:
Attack1: Swing staff
Attack2: Summon chompies
Attack3: Turn into a giant chompy and jump around

Chill Bill:
Attack1: Fire Snowblower weapon to freeze enemies
Attack2: ????
Attack3: Fire a jetpack that can freeze enemies all around him

Shrednaught:
Attack1: Swing huge blade around
Attack2: ????
Attack3: ????

Now, a couple of notes:
1. If you have any questions of my predictions or want to know where I saw it, please ask.
2. Before you post info to if you've seen a new move make sure it's not probably an upgrade (for Skylanders)
3. I am not including unrevealed Characters
EDIT: 4. All Skylanders may perform a jump attack, I will not be listing those as most are body slams.

Food Fight can also ride on fruits.

Every character has a jump slam attack, even older characters.

I know this, but I can't tell if it's his second, third, or even his Soul Gem Ability. Not adding it until Skydad makes a more in-deph look at him or something.

In this video, you see some of their moves. Food Fight shoots tomatoes, and leaves a veggie land mine thing.

Also Wallop can smash his hammers like one of Stump Smash combos, for a short time.
