I was being "teased" by a co-worker about my Skylanders addiction (after I was bragging about how awesome my wife was for getting me all the Wave 2 figures from TRU when there was *no* way I'd be able to skip out of work this morning...), when I mentioned my spreadsheet.
I have a spreadsheet, currently divided into 11 columns:
Descriptor, Descriptor, Name, Element, Package, Gen, Base, Have?, SSA, SG, SSF
The two descriptor columns contain all the various "descriptions" of the characters. Things like "Lightcore", "Legendary", "Gnarly", etc. I also store the "Series 1", "Series 2", etc. here. For things that don't appear in the game (like, say, an all-red Drill Sergent), I store the description in parenthesis.
Name, is obviously, the name of the character. All characters are stored by their base name (Dark Spyro would be stores under Spyro, with "Dark" being one of the descriptors. Blizzard Chill would be under Chill, etc.). This lets me easily sort the sheet by character's name.
Element, is, of course, the Element. If it's an item or location piece, I store that here as well.
Package - what kind of package is the figure in? I'm not one to collect all types of packages, but I do grab some package variants (like, I'll grab any packaged version of a starter). So, this has the following: Single, 3-Pack, Adventure, Battle, Giant, SWAP, 2-Pack, and Starter (along with "card" for the Target card, "Easter" for Easter Chill and "Sidekick", for the individually bagged Sidekicks).
Gen - just a number (1, 2, or 3) denoting which Generation (or game in the series) that the character debuted in. This is different from;
Base - a number (1, 2, or 3) denoting which game the figure was released with. I also have the sheet set to color in the blocks, green for 1, orange for 2, and blue for 3.
Have? is if I have the figure or not. Generally, I don't list figures I don't have, but if I'm expecting something in the mail or such, I'll add it to the list with a 0 until it arrives. The spreadsheet also keeps a running total of how many figures I've got.
For SSA, SG and SSF - it's either a 1, 0, or X. An "X" means that this toy won't work in the console version of this game. A 1 means that the figure will work and counts towards the collection screen. A 0 means that it doesn't. Line by line, the individual numbers don't mean much (For example, I have Shroomboom in a single pack and two different battle packs, but only one of these counts as unique in Giants - so only one of them has a "1" by them). The numbers are more for the running total that adds up what my collection screen should count.

I just keep them on a shelf in groups of the same element. Any Skylander I use I take out of the package. I feel dirty if I keep them boxed, like I am ruining the fun of the toy. I do keep the boxes in as good shape as possible in the closet in case I ever need to sell them, I could at least have them looking almost new. I have a really good memory so I tend to know which ones I've leveled up and which paths they are on, even though I have like 120 of them now.

I have an access database file. It has many of the same items yours does but I've also included if they are exclusive, where to by them and type of character they are (giant, sidekick, core, etc). I've included pictures so if the kids are with me they can pick them as well.

I use a spreadsheet as well. Not quite as descriptive as yours, UncleBob, but it has everything I need. Name column (which I fill-in each cell as I acquire the character), Series (1, 2, 3, Giant, SideKick, Swap Force), Comments (usually used to denote which characters are currently available in which 3 pack or the contents of the Adventure/Battle packs), and the multiple columns to specify the alternate versions of the character (Dark, Legendary, LightCore, etc).

I have a table in word with pictures in addition to most of the other columns and rows mentioned by UncleBob. I initially designed it when my kids kept bugging me about which ones they wanted.

I've got two (soon to be three) spreadsheets. Each game spreadsheet lists the figures by element with descriptors if necessary (Legendary etc). These spreadsheets are to keep track of quests etc done on each. As for remembering which figures I need shopping, we've got everything including variants from older games and I just use my memory!

UncleBob, could you put your spreadsheet on Google Apps Spreadsheet in read only mode? I'd love to see this and be able to copy the format. Unfortunately with Activision's legal team I'm not entirely sure ANY application is going to survive for long, but they can't stop text in a spreadsheet.

An Excel Spreadsheet divided into 3 pages.
Page one is Cores figures. They are seperated by element into sections. A colored border goes around the element group, mayching the element (Green = Life, Purple = Magic, etc.). A row is spaced between each group. First column is SSA, with second being for an "X" if I have it. A note is added in the space with the X if multiples or specials are owned. Third Column is Ginats followed by another for X's, and finally fifth is Swap Force with another X column after it. Second page is LightCores are Special types (Swap Force/Giants). Fomatted similar to the first page, it has LightCores in a yellow border and Special in a black one with a row spacing them. First column is giants stuff, after that is swap force with a column for X's after each. The last page is for Magic items. A pink border is around the contents of it. First column is Adventure Pack Items, next is Magic Items. Adventure Pack items have a row spaced between each name, with them organized even with the magic items to show which items come with which AP. Third column set is Battle items, and the last one is Sidekicks.

Built a shelf...Painted each one with each element...Problem might occur for the next game, as we'll be out of space....Might have to take some of the less popular ones and tackle box 'em.

I also developed a spreadsheet, but with more of a focus on development, who needs work and whatnot. Actually, I took a screenshot of a part of it to make a meme, LOL! Here:
So, I listed everybody, separated into elemental groups. I first made this during SSA, so I ordered the elements in the order I saw them on the poster, LOL! Now with Giants I have the elements ordered by giant, newlander, then the 4 from SSA in (I think) the order they appear on the SSA poster. When I've gotten a duplicate, like Scarlet Ninjini when I already had regular Ninjini, I make another line, and put specifics in a comment (that's the red corner), like GITD or Scarlet or Punch. Then I list type (Classic for Green Base, New for Newlanders, Giant for giants, S2 for S2). Since I list EVERYBODY, I then have a column to tick off which ones I own. Then I keep track of Level and Heroics done. It uses the Type column to count up how many Heroics this one should be able to do - right now that's 30 for giants/newlanders, 49 for anybody who can enter SSA). Anyone who hasn't done their full count gets a big exclamation mark to call my attention to it, LOL! Then Quests done, then what upgrades have been purchased, including which path I chose, as well as if I've found the Soul Gem and if I bought that upgrade (I found all Soul Gems in both games months ago, though. And of course the Wow Pow. Finally, I have a column that goes through all that, and gives me how complete it is as a percentage, so I can bring everybody up to 100%. I also made other spreadsheets in the same file in the meantime to keep track of certain information, like a "map" of the Oracle level, and a "map" of the Hobson's Choice Heroic. Oh, and one sheet is all the hats, ordered by where to find them (in either game), with another sheet with it ordered by what boosts it gives, so if I want the best Armour boost, I can see that it's the Trucker Hat. Or the best hat to give boosts to both Armour and Critical Hit, whatever. Oh, and that yellow in the screenshot is to "mark" for me which is the Lightcore character for the element. Doesn't mean I HAVE the Lightcore, it's just so I can keep track,
