Nothing. It's not shown.
You will still have it on when you get back to Giants though.

As long as you don't equip a new hat in Spyro's Adventure, you'll still have your hat in Giants.

And a huge pain in the butt that is too. I still have yet to replace my copy of SSA after my fire, so I don't dare change any hats on my revived series 1 skylanders.
