A plot dragon is just the really big huge boss/monster/machine that you have to fight before the main boss of the game, or is the ever more-so powerful villain that the main character fights before the main villain.

That's not entirely true...
It may just change.

It really depend on what kind of dragon you are then.
(Like one from Dragon Wars/Reign Of Fire....versus ones like the one from DragonHeart)
Not all dragon would be like emotionless animals...

Yeah I would.

There are many types of dragons as we all know. So who's to say they don't have thumbs? Or how big they are. Or why we cannot scale things up or down?

And I sure as Hell wouldn't lose my personality. I'd say Spyro and the gang had personalities, Why couldn't I?
