...on my profile settings there was some option called 'subscriptions'.

I've been here 3 years and I never noticed. what are they?

I turned it on to see if it was useful.

I'm curious too, what does "subscribing" do? Is it like with YouTube where you get notifications whenever something goes down?

You can go into your settings and view your subscriptions where it will show if said topic has new posts. Unless you check this page, it doesn't matter though.
