actually legendaries have different steriodic stats. and Variety ones are the same as normal ones just different colored (like Blue bash is the same a normal bash just different figure color)

Thus far there doesn't seem to be any aside from color. However it might be like the Spyro/Dark Spyro thing where they are totally different on the 3DS version.
